Tamil Nadu Samayal's - Nethili Karuvattu Fry
Ingredients:
Dried anchovies (nethili karuvattu): 1 cup
Red chili powder: 1 tbsp
Turmeric powder: 1/2 tsp
Coriander powder: 1 tsp
Cumin powder: 1/2 tsp
Black pepper powder: 1/2 tsp
Ginger-garlic paste: 1 tsp
Lemon juice: 1 tbsp (optional)
Salt: to taste
Oil: for frying
To prepare Nethili Karuvattu Fry, start by washing and soaking 1 cup of dried anchovies for 10-15 minutes, then drain and pat them dry. Marinate the anchovies with a mix of 1 tbsp red chili powder, 1/2 tsp turmeric powder, 1 tsp coriander powder, 1/2 tsp cumin powder, 1/2 tsp black pepper powder, 1 tsp ginger-garlic paste, salt to taste, and 1 tbsp lemon juice (optional) for 15-20 minutes. Heat oil in a pan over medium heat and fry the marinated anchovies in batches until crispy and golden brown, about 4-6 minutes. Drain the fried anchovies on paper towels and serve hot as a side dish or snack.
