Tamil Nadu Samayal's - Nethili Kaaruvattu Gravy
Ingredients:
Dried anchovies (nethili karuvattu): 1 cup,
soaked and drained Onion: 1 large,
chopped Tomatoes: 2,
chopped Ginger-garlic paste: 1 tbsp
Green chili: 1, slit
Red chili powder: 1 tbsp
Turmeric powder: 1 tsp
Coriander powder: 1 tsp
Cumin powder: 1 tsp
Grated coconut: 1/2 cup, ground into a paste
Oil: 2 tbsp
Salt: to taste
Water: 1/2 cup
Curry leaves: a few
Instructions:
Heat oil in a pan, add mustard seeds, urad dal, and chana dal. Sauté until golden.
Add onions and cook until translucent. Then add ginger-garlic paste and green chili.
Add tomatoes and cook until soft. Stir in red chili powder, turmeric, coriander powder, and salt.
Add anchovies and mix well. Stir in the coconut paste and water. Add curry leaves.
Simmer for 15-20 minutes until the gravy thickens and anchovies are cooked
